Set up experiment tracking

As we will be training several different GNN models, and various configurations of these with the goal to optimise performance, we need a way to keep track of such different training runs in order to compare performance and keep a paper trail. Tools like MLFlow do this, and have free community versions, so setting up such a tool to work with the repo would be very valuable.
